Seniors Summer Nutrition – Tim’s Flatlander Chili

At any Trillium community, we pride ourselves on providing our Residents with delicious, wholesome and nutritious meals. Food is so important to our Residents and we want to ensure we’re providing them with a diverse menu that meets all their nutritional needs.

Our Trillium Bevan Village Support Service Manager, Tim Lall, loves to be creative with menu creation and you’ll often find him sitting down with Residents in the dining room asking feedback on the new additions to the menu.

The favourite recipe on the summer menu so far, according to our Residents, is Tim’s Flatlander Chili. Here is the recipe:

  • 2 pounds of lean ground beef
  • 1 46 fluid ounce can of tomato juice
  • 1 29 ounce can of tomato sauce
  • 1/2 cup chopped onions
  • 1/2 cup chopped celery
  • 1/4 cup chopped green bell pepper
  • 1/4 cup chili powder
  • 2 teaspoons ground cumin
  • 1 1/2 teaspoons fresh garlic
  • 1 1/2 teaspoons garlic powder
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon white sugar
  • 1/8 teaspoon ground cayenne pepper
  • 2 cups of red beans

This recipe can be serviced with garlic bread or simply bread & butter. Simple, but delicious. We hope you love Tim’s Flatlander Chili as much as our Residents do!
